With Easter right around the corner, you might be looking for something extra special to serve your loved ones on Easter morning. Well, look no further, these pancakes taste so yummy that no one will even believe that they are healthy…not even you will believe it!
I found a recipe very similar to ths one on Pinterest that I used as a guide. I then tweaked it just a bit and of course used my trusty Pamela’s baking and pancake mix in place of the flour to make it a gluten-free recipe.
Pancakes:
1/2 c. Vanilla Greek yogurt
1/4 c. Crushed pineapple – drained
1 egg
1/4 c. Finely shredded carrots
1/2 c. Pamela’s baking and pancake mix
3/4 tsp. baking soda
1/2 tsp. pumpkin pie spice
Combine yogurt, pineapple, egg and carrots.
Add Pamela’s, baking soda and pumpkin pie spice. You may need to add a few Tbsp. of liquid if the batter is too thick.
Spray your griddle with cooking spray, pour your batter, cook, flip, cook, EAT!
Syrup:
1/2 c. Light cream cheese-softened
1/2 c. Pure maple syrup
Mix till smooth. Warm slightly in microwave. Pour on pancakes. Mmmm…enjoy
